Recipe: mango, lime and mint ice blocks

A bonus of living in sub-tropical Sydney is knowing people who have mango trees in their backyard. Imagine that! These ice blocks made great use of the bounty.
Mango, lime and mint ice blocks
2 large ripe mangoes, roughly chopped
2 limes, juiced
2 tablespoons mint, chopped
Whiz ingredients in a blender (or jug using a stick blender), until smooth. Taste. Add more lime juice or mint if required.
Freeze in icypole moulds for at least 5 hours.
Variation: No mango glut? Make a single mango go further by adding apple, orange or pineapple juice.
This recipe is dairy-free, gluten-free, vegan and contains no added sugar.
