It was a delight to return to one of my favourite hotel’s in the world, Hotel Britania in Lisbon. In the late afternoon guests can help themselves to herbal tea and wicked Portuguese pastries. But for me, their fruity homemade drink was the star. I’m grateful to the ever-helpful concierge for sharing the recipe for this refreshing and healthy summer cooler.
7 – 8 strawberries, cleaned and hulled
1 kiwi fruit, peeled
Handful of fresh peppermint leaves
1 litre carbonated water/sparkling mineral water/soda
Lemon or lime juice, to taste
Blend the fruit and mint with a dash of water (a stick blender in a large jug is ideal). Stir in the fizzy water and add the juice of a lemon or lime. Taste. Add more citrus juice or water to taste.
Variations: try different berries, such as raspberries, or your favourite fruit.
