Recipe: watermelon ice blocks
It’s so easy to transform a wedge of watermelon into a delicious Middle Eastern inspired, iced treat. These fruity popsicles contain no added sugar so are a perfect FebFast treat, and a delicious way to cool down on a hot day.
Watermelon ice blocks
Note: quantities vary depending on size and number of ice block moulds used. If you have too much mixture, freeze it in regular ice cube trays and suck on the single cubes, or add them to a jug of water
Watermelon, rind and seeds removed, cut into large chunks
Juice of a lime or lemon, to taste
Handful of mint, finely ripped or sliced
1 – 2 tsp rosewater
Liquidise your watermelons in a juicer or food processor. (You may need to sieve if using the latter.) Add the lime or lemon juice and rosewater to taste. Stir through the mint and pour into your moulds. Freeze for at least 4 hours.
This recipe is gluten-free, dairy-free, no added sugar, vegan and vegetarian. Sadly no freezers in Paleo times!
