Recipe: orange and ginger quinoa
With a surplus of homegrown oranges recently, I found creative ways to use this versatile fruit. This simple quinoa dish is one of my favourites. It makes an easy breakfast and can be jazzed up to make a delightful, healthy dessert.
Orange and ginger quinoa
(serves two)
1 cup quinoa, rinsed well
1.5 cups fresh orange juice
1 tsp ginger juice (use a ginger grater, or place grated ginger in muslin and squeeze out the juice)
Place quinoa, orange and ginger juice in a pot. Bring to the boil. Turn heat to low (a heat diffuser mat is handy for this) and simmer with lid on for 15 minutes. Turn off the heat, keep the lid on firmly and sit for 5 minutes before serving.
For dessert try serving with a drizzle of maple syrup and slivers of toasted almonds. Or add fresh fruit and a splash of coconut cream.
Variations
- Want more protein? Top with nuts or seeds.
- Substitute orange for another type of fruit juice
- Don’t like ginger and/or orange but want a hot quinoa breakfast or dessert? Simmer quinoa in your preferred milk (I like coconut or almond) as above and top with sliced banana and toasted almond flakes.
