Recipe: homemade almond milk
Run out of milk for your cereal or smoothie? This makes a good alternative and is sugar/fructose/dairy-free.
Almond milk
(Makes 3 cups)
Soak 1 cup almonds (organic if possible) in purified water over night or for at least 3 hours
Drain and discard or reuse the water.
Blend almonds with 3 cups fresh purified water and 1 teaspoon good quality vanilla extract or paste
Strain through a fine sieve or muslin and use the juice, as you would milk. It seems a waste to discard the pulp, try adding it to porridge or check the suggestions below.
Other seed or nut mylks
Don’t like/can’t tolerate almonds or would prefer another flavour? Use the same technique with other nuts or seeds. Hemp seeds are now available in Australia and make a healthful alternative mylk.
Pimp your pulp
Don’t know what to do with all the leftover pulp? Here are some great ideas to use it and be zero waste (though if in doubt you can still compost it).
